Slow Cookers

We've been doing a few things in a slow cooker recently, wondered if anyone else was a fan and had some good recipes.

I love my slow cooker, I've used it an awful lot over this winter as it's great for comforting casserole type stuff. I've also tried things like lamb shanks in a coconut Thai sauce and my fave is Jamie Olivers cowboy chilli made with cheapo brisket that you shred once cooked (rather than using mince), it is one of the best things I've ever tasted. If you give me an idea what sort of stuff you like I can bore you to death with recipes. Just let me know.

We're not that fussy tbh :) at the moment we've mostly used it for stews, and Carrie cooks up a good beef stroganoff, we haven't tried any currys yet but want to, the cowboy chilli sounds good too!

I made some great pulled pork on Saturday, was making great sandwiches up until yesterday. :)

Pretty simple, too, just get a pork shoulder and put together a rub mixture for it (brown sugar, salt, pepper, paprika, garlic), sear the meat on each side in a frying pan and then throw it in the slow cooker with some chopped onions and a cup or two of water. Cook on low for about 8 hours, take it out and shred the meat, remove most the liquid from the cooker and return the shredded meat to the cooker and add a buttload of bbq sauce, cook for about another hour. Lovely.

Here's the link for Jamie's chilli. (scroll to reply #50) I  cook it in slow cooker for about 7 hrs or until the meat falls to bits and is easily shreddable. I also use about half the fresh/dried chilli he suggests. The smoked paprika is an essential ingredient, I managed to find it in the Tesco Finest ingredients section, along with the dried chilies. I also added more of the coffee liquid than he suggests. Have made it a few times and tried different combinations of ingredients as I can never stick to a recipe, but it's been fantastic every time.
